A tasty breakfast and good for you too.

Our Hot’n Sweet Chilli Sauce is a perfect accompaniment.

Ingredients:

1/2 a Block of Feta Cheese

1 tin of Creamed Corn

2 small or 1 large Zucchinis, grated

2 eggs, lightly beaten

1/3 cup of Milk

1 cup Self-Raising Flour

1/2 teaspoon Ground Cumin

Salt and Cracked Black Pepper

Halved Cherry Tomatoes and Lettuce to serve

 

Method: 

Whisk together the corn, zucchini, eggs and milk. Gradually stir in the sifted flour, cumin, salt and pepper. Crumble in the feta and mix.

Heat a little oil in a non-stick frying pan over medium heat. Using a tablespoon, place heaped spoonfuls of mixture in the pan and cook in batches. Flip with a spatula when golden brown on the bottom, remove and drain on a paper towel when cooked through. Cover and keep warm as you cook the remaining of the fritters.

Serve on a plate with cherry tomatoes, lettuce and a couple of spoonfuls of our “Hot’n Sweet” chilli sauce.
