We always suggest this recipe to customers at our Markets as a great use of our “Rub ya Grub Pirri Pirri Powder”. You can make it to the spice level that suits your taste by adjusting the amount of Pirri Pirri, one teaspoon is s good start.

For this one you can substitute veges you like or just what you have in the fridge for the ones we have used, it’s all up to you and it’s great to use what you have grown yourself in your own Aquaponic System.

You will need a large Baking Tray that will fit in your oven or BBQ, you can line it with Baking Paper to reduce the cleanup effort.

Prep time 15 mins, Marinate time 2 hrs, 25 – 30 mins. Harder veges like Potatoes and Pumpkin could be par cooked in the Microwave first.

Ingredients for 2 Servings:

2 Chicken Drumsticks

4 Chicken Wings

250 grams Greek Style Yoghurt

1.5 Teaspoons Fiery Fish Farm Pirri Pirri Powder

Zest of 1 Lemon

4 Baby Potatoes (Brushed) cut into cubes

1 Lemon cut in half

1/2 Medium Eggplant cut in to cubes

1 Zucchini cut in to rounds

8 Cherry Tomatoes

180 grams Feta Cheese

Cracked Salt and Pepper

Suggested Olives, Coriander or Parsley

Method: 

Place chicken pieces in a large Snap Lock Bag along with Yoghurt, Pirri Pirri Powder and Lemon Zest (save the lemon for later). Gently massage the bag to incorporate the ingredients then place bag in fridge for at least 2 hours (overnight is ok).

After marinating chicken place it in a Baking Tray lined with Baking Paper along with other ingredients (Feta should be added half way through cooking), Salt and Pepper to taste.

Place in BBQ with lid closed or Oven set at 180 deg C and cook for 15 mins, then turn the Chicken over and add the Feta Cheese. Cook for another 15 mins or until the Chicken is done.

Sprinkle with Coriander or Parsley and serve.
